Lamb Skewers with Lemon Couscous

Spring is in the air - so it must be time for lamb!! Something light, and fresh!!

I saw this recipe recently in the latest edition of Good Food Magazine, but it is actually part of the CSIRO diet - I kind of followed the recipe, but as per "CCC" I made a couple of variations along the way - perhaps not in strict adherence with the diet, but I think for the better!

Lamb Skewers with Lemon Couscous


Serves 4


800g lean lamb steaks, diced into cubes
1 tbs olive oil
2 cloves crushed garlic
2 tbs lemon juice, plus lemon slices to serve
1 tsp ground coriander
1/2 tsp turmeric


Wooden Skewers (that have been soaked for several hours in water)


Couscous
1 cup couscous
1 cup chicken stock
grated rind of 1 lemon
30g butter


Herbed Yoghurt
3/4 cup Greek style yoghurt
1 tbs chopped coriander
1 tbs shredded mint
1 tbs sweet chilli sauce
salt & freshly ground black pepper


Combine the lamb, oil, garlic, lemon juice, ground coriander and turmeric in a large ziploc bag.  Allow to marinate for at least 30 minutes.  The longer the better!!




To make the herbed yoghurt, combine all ingredients in a bowl.


Thread the lamb onto skewers.






To make the couscous heat the chicken stock in a saucepan until it reaches boiling point.  Turn the heat off, and add the couscous and lemon rind.  Cover and stand for 5 minutes.  Add the butter, and fluff with a fork to incorporate the butter into the couscous.


Preheat the BBQ.  Cook turning the skewers occasionally for 5-6 minutes for medium, or until cooked to your liking.  Cook thick slices of lemon on the grill until it is caramelised on both sides.


Serve the lamb skewers with the couscous, lemon slices and the herbed yoghurt.



Now if you really want to feel virtuous - don't add the butter to the couscous - but if you want to live on the wild side - go ahead and add it!!

As the weather is wont to do at this time of year, we were plunged back into cold the next day and spring was all but forgotten!!!  I know it won't be long though, and the warm weather will be here to stay - longer days, BBQS will become the norm again and the roasts and casseroles will be forgotten for another six months!!  Strawberries are everywhere now, asparagus will be with us soon - mmm I can't wait.

  1. This lamb and cous cous looked great but i had no lamb on hand. Made it with chicken instead and it was delicious! I loved the herb yoghurt.
